Snickerdoodles

  • 1 cup (230 g) butter, at room temperature
  • 1 1/4 cup (265 g) regular sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 1/3 cups (425 g) all-purpose flour
  • 2 teaspoons cream of tartar *
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Topping

  • 1/3 cup (80 g) regular sugar
  • 1 1/2 teaspoon ground cinnamon

Preheat the oven to 375 F (190 C). I use the fan setting.

Sift together the flour, baking soda, cinnamon and cream of tartar.

Put the butter into a mixing bowl and beat for about 1-2 minutes. Add the sugar and beat for another 1-2 minutes.

Add the vanilla and egg, beat until well blended.

Add the flour mixture and beat again until everything is well blended.

Using a mini ice cream scoop, make small balls from the mixture. Roll into the topping (sugar and cinnamon mixture) and arrange on lined baking trays.

Bake for about 10-12 minutes.

*cream of tartar is an important ingredient in this recipe, if you omit it your snickerdoodles won’t be as fluffy.
