Fruit purée:

  • fruit or berries (strawberries, raspberries, etc.)
  • lemon juice

You can use frozen berries for this recipe.

A little lemon juice adds freshness and acidity, though you could use water if you prefer. Just a little bit, though!

Put fruit and lemon juice into a pan and place on the heat.

Low/medium heat, it should not boil.

Transfer to a blender and whizz until smooth…

There you have it – fruit purée ready to be mixed into a mousse, frosting or anything you like.

Push the purée through a sieve if you want it to be completely smooth.

I love this purée with some chocolate mousse…
