Today’s recipe is for Lemon Pop-up Rolls, delicious lemony rolls which literally pops up during baking…

Topped with a cream cheese frosting these buns are such a pleasure to eat… a real treat.

Here is the recipe, enjoy!

  

 

Lemon Pop-Up Rolls (yield: 12)

  • 2/3 cup (140 ml) milk
  • 3 tablespoons (45 g) butter, softened
  • 1  3/4 oz. (50 g) fresh yeast
  • 1/4 teaspoon salt
  • 2 tablespoons regular sugar
  • 4 tablespoons Jell-O French Vanilla Pudding
  • 1 large egg
  • 2  2/3 cups (350 g) all-purpose flour

  Pour the milk into a small bowl and warm in the microwave 1 minute or until tepid. Add the butter and stir until melted.

Add the fresh yeast and stir until dissolved.

Lightly whisk the egg…

Pour the milk mixture into a mixing bowl.

…followed by the whisked egg.

Add 2 tablespoons sugar…

...and the 4 tablespoons vanilla pudding powder.

Then the salt..

…and one third of the flour.

Knead the dough and add the flour little by little.

If you are using a kitchen machine this will take about 5-8 minutes.

The dough will be quite sticky, but there’s no need to worry..

Leave the dough to rise for 40 minutes or until doubled in size.

Preheat the oven to 350 ˚F (180 ˚C).

Turn out the dough onto a floured work surface…

…and roll out to a large rectangle.

The thinner, the better…

Lemon filling:

  • 2 tablespoons (25 g) butter
  • 4 tablespoons regular sugar
  • finely grated zest of 2 lemons
  • juice of 1/2 lemon

Melt the butter in the microwave, then brush the melted butter over the dough.

Distribute the lemon zest over the buttered dough.

And sprinkle over the sugar.

And last, but not least, the freshly squeezed juice from 1/2 lemon.

Starting from one long side, lightly roll up the dough like a Swiss roll.

Using a sharp knife, cut the roll into approx. 12 pieces.

To get the pop-up effect, place them in a muffin pan lined with cupcake cases or other pretty paper cases.

Cover and leave to rise for 20-30 minutes.

Uncover the buns and bake for about 15 minutes.

Leave to cool slightly while you make the frosting.

Cream cheese frosting:

  • 3  1/2 oz. (100 g) Philadelphia cream cheese
  • 4-5 tablespoons powdered sugar
  • 2-3 tablespoons freshly squeezed lemon juice

Put all the ingredients into a bowl and stir until everything is well blended.

The lemon pop-up rolls are incredibly good as they are, but this frosting gives them that “extra touch”. .

So good with a cup of tea or coffee.

They make a delicious breakfast, freeze the ones that are left (without the frosting) and defrost overnight.
