Lemon curd is easy to make, and it’s perfect for cakes, cupcakes and cheesecakes.

Enjoy!

Lemon Curd

  • juice from 1-2 lemons (approx. 1/2 cup, 115 ml)
  • 2 teaspoons finely grated lemon zest
  • 1/3 cup (75 g) regular sugar
  • 4 egg yolks
  • 4 tablespoons (60 g) unsalted butter, at room temperature

Put the lemon juice, zest, sugar and egg yolks into a bowl.

Place the bowl over a saucepan of simmering water and whisk until thickened.

This may take some time, just be patient.

Take the bowl off the heat. Add the butter and stir until the mixture is nice and smooth.

Pour the lemon curd into a jar or glass and leave to cool. Store in the fridge, it will keep well for two weeks.

    Er denne curden god som fyll i sjokoladekake? Synes ofte at kaker blir altfor søte, så hadde vært godt med noe syrlig. Er det andre fyll du kan anbefale?

  2. Jeg får bare ikke denne til, hva er det jeg gjør galt??? Jeg visper og visper og visper, men det blir aldri noe krem, bare suppe…

  3. Horfor blir ikke min lemon curd annet enn en rennende guffe av eggeplomme, sitron osv?? Uansett hvor nøye jeg følger oppskrifta blir det bare en motbydelig saft! Jeg gir snart opp å lage noe fra denne bloggen, for dette er tredje oppskrift jeg prøver, følger nøye og der resultatet ender i søpla 🙁

    You really have to mix the ingedients like 30 minutes…so yummy!!

      Hi Kathrin, there’s no need for dry milk to make this recipe…this is lemon curd. Or did you have a different recipe in mind?

      Hi Kathrin, in that case you can omit the powdered milk, but use tepid whole (full fat) milk instead of the tepid water.

  10. Jeg lagde nettopp denne, og det gikk helt fint! Jeg brukte en stavmikser, og da tok det kanskje bare 5-10 minutter. Lot det stå i noen minutter over vannbadet innimellom også, så det tykner litt av seg selv. Lukter litt egg av det, men det går nok fint!
