Today’s temptation is a Triple Deluxe Lemon Pound Cake, a triple delicious lemon cake!

Here is the recipe, enjoy!

First, make the lemon curd.

Lemon curd

  • juice from 2 lemons
  • finely grated zest from 1 lemon
  • 1/2 cup (120 g) regular sugar
  • 4 egg yoks
  • 3 1/2 tablespoons (50 g) butter

Bring out all the ingredients.

Put all the ingredients into a bowl, then place the bowl over a pan of simmering water.

Whisk until the mixture starts to thicken.

Mmmm so yummi!

The lemon curd should be done after about 7 minutes.

Pour into a jar and leave to cool completely.

Triple Deluxe Lemon Pound Cake (2 loaves):

  • 2 1/3 cups (295 g) all-purpose flour
  • 1/4 cup (35 g) corn starch
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/4 cups (500 g) regular sugar
  • 8 large eggs, at room temperature
  • 1/3 cup + 1 tablespoon (100 ml) lemon juice
  • finely grated zest from 1 lemon
  • 2 cups (450 g) butter
  • 1/2 cup (120 ml) crème fraîche
  • 2 teaspoons pure vanilla extract
  • Lemon curd

Bring out all the ingredients. It’s important that the eggs are at room temperature!

Put the butter into a small pan and place on a low/medium heat until melted. Set aside to cool.

Put all the eggs, the sugar, lemon xest and lemon juice into a mixing bowl.

Whisk for about 3 minutes (don’t over-whisk).

Now add the melted and cooled butter.

Add the crème fraîche and vanilla extract.

Whisk for another 2 minutes.

Sift the flour, baking powder, baking soda and corn starch into a separate bowl, then sift again 4 more times.

Stir the flour mixture into the batter in three additions.

Use a rubber spatula for this.

This quantity is enough for two  4 x 8-inch (10 x 20 cm) loaf pans. Line the pans with baking paper and pour in batter to fill them about 1/4 full.

Spread some lemon curd on top of the batter…

…and divide the remaining batter between them.

Bake in a 350 ˚F (180 ˚C) oven for about 55-65 minutes.

Done! Leave to cool completely before pouring over the glaze. 

Lemon glaze:

  • 1 1/4 cup (150 g) powdered sugar
  • juice from 1-2 lemons

Mix well until the glaze is smooth and shiny, then pour over the loaves.

Decorate with some fresh lemon, if you like.

Super yummi!

This cake is even better if you leave it for a day before serving!
