Hello everyone!

Today’s temptation is a simple, but delicious chocolate mousse with a lemon ice cream.

Enjoy!

 

Chocolate mousse:

  • 7 oz. (200 g) dark chocolate (70% cocoa solids)
  • 1 1/2 tablespoon (25 g) butter
  • 3 eggs, separated
  • 2 tablespoons regular sugar
  • 1 cup + 1 tablespoon (250 ml) heavy cream
  • 2 teaspoons instant espresso powder

 

Bring out all the ingredients.

Melt the chocolate with the butter (in the microwave or using a waterbath).

Add the egg yolks, stir well and set aside.

In a separate bowl, whisk together the cream with the instant espresso powder.

Add the chocolate mixture to the whipped cream.

Using a hand-held electric whisk, mix together until everything is well blended.

Super yummi!

In a separate bowl, whisk the egg whites with the sugar.

Gently fold the egg whites into the chocolate mixture.

Chocolate mousse done!

Divide the mousse between small dessert bowls, cups or paper cases.

Decorate with some fresh raspberries and an Oreo cookie, if you like.

And why not top with some mini marshmallows, too?

Now to the lemon ice cream:

Lemon Ice cream:

  • 2 eggs
  • 1 egg yolk
  • 1/3 cup + 2 tablespoons (100 g) regular sugar
  • 1 cup + 1 tablespoon (250 ml) heavy cream, whipped
  • 12 oz. (350 g) homemade lemon curd

Bring out all the ingredients.

Put the sugar, eggs and egg yolk into a bowl. Place the bowl over a pan of simmering water and start whisking.

After about 6 minutes – remove the bowl from the pan and leave to cool for 5 minutes.

Add the lemon curd and whisk until well blended.

Add the whipped cream and fold it into the mixture using a rubber spatula.

I use these super cute paper cases.

Cover with plastic wrap and freeze for at least 4 hours.
