Hello everyone, I hope you are all well!

This is a quite summery treat; macaron pastry cases filled with crème pâtissière and fresh fruit.

The pastry cases are made from coconut, sugar and egg whites, baked in individual pie tins, then filled with a luscious homemade vanilla custard and topped with fresh berries.

Just lovely!

Super yummy and very easy to make.

Here is the recipe, enjoy!

Macaron pastry cases:

  • 1 3/4 cups (180 g) desiccated coconut
  • 2 egg whites
  • 1/2 cup (115 g) regular sugar

Bring out all the ingredients.

Put the coconut, sugar and egg whites into a bowl and mix together using a rubber spatula.

Grease the pie tins with some non-stick baking spray, tip in the coconut mixture and press down and up the sides of the tins.

The mixture will give you six 4-inch (10 cm) mini pies, but I like the edges quite thick so I made four instead.

Bake in a 300 ˚F (150 ˚C) oven for about 30 minutes or until golden.

Fill the pies with crème pâtissière, here is the recipe:

Crème pâtissière:

  • 2  1/4 cup (500 ml) milk
  • 1 teaspoon vanilla extract or 1 vanilla bean (split in half lengthways and seeds scraped out)
  • 4 egg yolks
  • 1/3 cup (75 g) regular sugar
  • 4 tablespoons (40 g) corn starch

 

Bring out all the ingredients.

In a saucepan, heat the milk with the vanilla extract or vanilla bean + seeds.

Put the egg yolks and sugar into a mixing bowl and whisk until nice and fluffy.

Whisk in the corn starch.

Add the warm milk (remove the vanilla bean if using) to the egg mixture, whisking all the time.

Pour everything back into the saucepan. Continue whisking over a low heat for about 2-3 minutes.

Custard done!

If you’re not using this straight away, pour the crème into a bowl, cover with plastic wrap and set aside to cool.

When you’re ready to use it just give it a good whisk, adding a splash of cream to loosen.

You can of course use any fruit or berries to decorate; kiwi, peaches, strawberries, banana, raspberries…
