The weekend is here again and it’s time for a treat… Very Vanilla Doughnuts…

Here is the recipe, enjoy!

Very Vanilla doughnuts:

  • 1 3/4 oz. (50 g) fresh yeast
  • 1 1/3 cup (320 ml) tepid milk
  • 5 tablespoons sugar
  • 1/2 cup (115 g) butter, melted
  • 3 eggs
  • 4 tablespoons vanilla pudding powder or milk powder (optional)
  • 4 – 4 1/3 cups (500-530 g) all-purpose flour
  • 1 vanilla bean (split in half lengthways and seeds scraped out) or 2 teaspoons vanilla sugar

Bring out everything you need.

Crumble the yeast into a bowl, add the tepid milk and water and 1 tablespoon of the sugar.

Set aside for 10 minutes to activate the yeast.

Put the rest of the ingredients into a mixing bowl. Add the dissolved yeast and knead until the dough is smooth and elastic.

Put the dough into a bowl and cover with a clean dish towel.

Leave to rise for 45 minutes or until doubled in size.

This is what my dough looked like after 45 minutes…

Lightly dust a work surface with flour and roll out the dough about ½-inch (1 cm) thick.

Use a round cookie cutter to cut out the donuts, then use a smaller cutter to make a little hole in the middle.

Cover with the dish towel and leave to rise again for another 30 minutes.

Make the vanilla sugar mixture. Put the seeds from 1 vanilla bean into a bowl with the rest of the sugar. Mix until combined.

I usually make vanilla sugar in larger quantities for later use by mixing the seeds from 2 vanilla beans with 4 1/2 cups (1 kilo) sugar. Store in an airtight container for 2 weeks.

Perfect to add to your coffee, or to use in baking.

Heat the oil to about 375 ˚F (190 ˚C).

Bring out a plate lined with paper napkins or kitchen paper, and a slotted spoon.

Fry the donuts one at a time for about 1 minute each, flipping them over halfway through cooking so that they brown evenly on both sides.

Transfer to some kitchen paper and leave to drain for 30 seconds.

Then put into the vanilla sugar, turning them around to get an even coating.

And there they are – very vanilla doughnuts!
