Hello everyone!

These brownie cake pops consist of leftover brownies, lemon curd and licorice powder. I absolutely love this flavor combination, I hope you will, too!

Brownie Cake Pops with Licorice and Lemon curd

  • brownie leftovers
  • lemon curd
  • chocolate
  • licorice powder
  • lollipop sticks
  • mini muffin paper cases (optional)
  • sprinkles or chocolate cake leftovers

 

I had some brownie leftovers, but if you need to make brownies you can find some recipes here.

You will also need lemon curd, you cand find my recipe here.

I use 1 teaspoon licorice powder and 2 tablespoons lemon curd for these cake pops.

Crumble up the cake and mix with the lemon curd and licorice powder.

The mixture should be moist enough to roll into small balls and still hold a round shape.

I use a small ice cream scoop to make sure the balls are equally sized.

Place in a lined pan and freeze for 15 minutes.

Melt the chocolate and bring out the sprinkles/decorations. I toasted some leftover chocolate cake in the oven, then used the crispy chocolate cake crumbs instead of sprinkles.

One at a time, dip the tip of a lollipop stick into the melted chocolate, and then insert the lollipop stick straight into a cake ball, pushing it no longer than halfway through.

Repeat with the remaining cake balls.

Now dip the entire cake ball into the melted chocolate until it is completely covered.

Rotate the lollipop stick if necessary to allow the excess chocolate to fall off evenly.

Repeat with the remaining cake balls.

Roll into some sprinkles, or (as I did here) in some toasted leftover chocolate cake.

Place in mini cupcake paper cases, if you like.

Ready to serve!
