Hello everyone!

Today’s temptation is a coffee meringue brownie cake, if you like coffee with chocolate you’ll love these brownies!

Coffee meringue brownies:

  • 8 oz. (225 g) dark chocolate
  • 1 cup + 1 tablespoon (250 g) butter
  • 1 2/3 cups (200 g) all-purpose flour
  • 4 eggs
  • 2/3 cup (150 g) regular sugar
  • 3/4 cup + 1 tablespoon (175 g) light brown soft sugar
  • 3 tablespoons pure unsweetened cocoa powder

 

Bring out all the ingredients.

Put the butter and chocolate into a bowl and melt over a saucepan of simmering water.

Get ready to stir in the rest of the ingredients…

First both sugars…

…then add all the eggs.

Now stir in the cocoa powder.

And then the flour.

Use a rubber spatula to stir in the flour, stirring gently until everything is well blended. Do not overmix.

I used a pie dish here, but use a regular round baking pan if you prefer, about 9 inches (23 cm) in diameter.

Bake in a 350 ˚F (180 ˚C) oven for about 30 minutes.

Yummy…

Now make the coffee meringue topping.

Vanilla Bean Frosting:

  • 7 egg whites
  • 2 1/2 cup (550 g) regular sugar
  • 1 vanilla bean, split in half lengthways and seeds scraped out
  • 1 tablespoon coffee extract and 1 tablespoon coffee liqueur

Put the egg whites, sugar and seeds from the vanilla bean into a large bowl.

Place the bowl over a saucepan of simmering water.

Whisk by hand for about 4 minutes, or until the sugar has dissolved.

Continue whisking until the mixture is fluffy.

Transfer the mixture to the bowl of a freestanding electric mixer and beat for about 7 minutes or until the bowl no longer feels warm to the touch.

Done, and soo good

This Angel feather icing is just perfect for this cake!

Now add 1-2 tablespoons coffee extract, and coffee liqueur if using.

Fold the coffee extract (and coffe liqueur) into the meringue.

Mocca flavored meringue… I just love it!

Spread the mocca meringue over the brownie cake, no need to wait for the cake to cool first.

Return to the oven on maximum heat.

After about 2-3 minutes the meringue is slightly scorced, and the cake is ready to serve.
