Hello everyone, I hope you are all well.
Today’s temptations are these crispy peanut butter bars, I was inspred to make them after tasting something similar in Los Angeles.
There are three layers to these bars; one rice crispie and caramel layer, one milk chocolate and peanut butter layer, and one layer of chocolate ganache… Rich, yes, but oh so delicious!
Here is the recipe, enjoy!
Crispy Peanut Butter Bars:
- 1/2 cup (115 g) regular sugar
- 1/3 cup (85 g) butter
- 1/2 cup (120 ml) water
- 6 tablespoons light corn syrup or liquid glucose
- 5 oz. (150 g) Rice crispie cereal
If you can’t get Rice crispies, use any other crispy cereal.
Put the sugar, water and light corn syrup into a saucepan and place on medium heat.
Stir until the sugar has dissolved, then turn up the heat to high and stop stirring.
When the syrup has turned a golden color, remove from the heat.
Add the butter and leave it to melt…
Then pour the syrup/butter mixture into the rice crispies and stir to mix.
Pour the mixture into a lined pan, I use a 6 x 8-inch (15 x 20 cm) pan here, but most pan sizes will work.
Set aside to cool while you get on with the chocolate and peanut layer…
Milk chocolate and peanut butter layer:
- 10 oz. (300 g) milk chocolate
- 14 oz. (400 g) peanut butter
Put both ingredients into a bowl.
Place the bowl over a pan of simmering water and leave it there until everything has melted. Stir to make a smooth mixture.
Pour the chocolate/peanut butter sauce over the base.
Chill for at least 1 hour, or until the top layer is set.
- 7 3/4 oz. (220 g) dark chocolate
- 1 teaspoon light corn syrup or liquid glucose
- 1/2 cup (115 g) unsalted butter
Put all the ingredients into a bowl and place over a pan of simmering water. .
When everything is melted and the mixture is smooth – pour over the second (now completely set) layer.
Chill for an hour or until set.
Cut into squares…
This treat is quite rich, a little bite goes a long way…
So delicious with a glass of cold milk…
