Today’s temptations are these simple, but super delicious oatmeal caramel cookies. Eaten straight from the oven there is nothing better…
Oatmeal Caramel Cookies:
- 1 cup (230 g) butter
- 3/4 cup (170 g) regular sugar
- 3/4 cup (150 g) soft light brown sugar
- 2 eggs
- 1/3 cup + 1 tablespoon (100 ml) caramel sauce or dulche de leche
- 7 oz. (200 g) crushed Daim
- 1 cup (100 g) oats
- 1 teaspoon baking soda
- 2 cups (250 g) all-purpose flour
- 2 teaspoons vanilla extract
Bring out all the ingredients.
Put the sugar, brown sugar and butter into a mixing bowl and beat until fluffy.
Add the eggs, one at a time, beating well between each addition.
Beat until very fluffy.
Now add the caramel and vanilla…
…and the flour, crushed Daim and oats.
Stir until everything is well blended.
Place tablespoonfuls of the dough onto a baking tray.
Bake in a 350 ˚F (180 ˚C) oven for about 12-15 minutes or until golden.
Fresh from the oven…
My kids loved these cookies, the caramel really makes them extra special.
Next time I’ll add some salted peanuts, too…
