Today’s temptations are these amazing cookies with a marshmallow and raspberry honey filling… Delicious!
Here is the recipe – enjoy!
Raspberry Marshmallow Honey Cookies
- 1 1/4 cup (150 g) all-purpose flour
- 1 teaspoon baking powder
- 1/3 cup (75 g) regular sugar
- 1/3 cup (40 g) very finely ground almonds
- 2 teaspoons vanilla extract
- 4 eggs
- 3 1/2 tablespoons (50 g) butter, melted
- 7 oz. (200 g) white mini marshmallows
- 2 tablespoons raspberry honey (or use any other honey)
Preheat the oven to 350 ˚F (180 ˚C) and bring out all the ingredients.
I used the honey pictured below, I got it from a health food store.
Sift together the flour and baking powder at least three times
Put the sugar and eggs into the mixing bowl and whisk for about 8 minutes until very light and airy.
Fold the flour mixture and ground almonds into the mixture.
Then add the vanilla extract and melted butter,
Place tablespoonfuls of the mixture onto lined baking trays.
Bake in the preheated oven for about 10 minutes.
Done! Leave to cool completely.
Put the marshmallows and honey into a heatroof bowl and place over a pan of boiling water.
Stir until melted and smooth.
Pair the cookies into ones that are similar sizes, fill with the marshmallow filling and sandwich together.
Lovely raspberry honey cookies… so yummy!
