These deliciously fresh cupcakes are made with buttermilk and juicy peaches, then topped with Angel Feather icing.

Just lovely!

Lovely Peach Cupcakes:

  • 3/4 cup + 1 tablespoon (200 g) butter
  • 1 1/4 cup (275 g) regular sugar
  • 2 1/4 cups (285 g) all-purpose flour
  • 4 eggs
  • 2 teaspoons baking powder
  • 1 1/2 cup (350 ml) buttermilk or natural yogurt
  • 3 peaches, diced


Preheat the oven to 390 ˚F (200 ˚C).

Put the butter and sugar into a bowl and beat until fluffy.

Add the eggs, one at a time, beating for one minuted between each addition.

Add the flour and baking powder, stir until well blended.

Add the diced peaches and buttermilk/natural yogurt.

Stir until everything is well blended.

Use an ice cream scoop to divide the batter between the cupcake cases, one scoop per cupcake.

Bake in a 390 ˚F (200 ˚C) oven for about 15-20 minutes.

Smells like heaven!

I like to top these cupcakes with an Angel Feather icing, you can find the recipe here.

I added a drop of soft peach food coloring here, then used a piping bag fitted with a Wilton 1A tip.
