Today’s temptations are delicious vanilla cupcakes with a fluffy Angel Feather icing…
Here is the recipe, enjoy!
- 1 1/4 cup (275 g) regular sugar
- 3/4 cup + 1 tablespoon (200 g) unsalted butter
- 4 eggs
- 2 1/4 cups (290 g) all-purpose flour
- 2 teaspoons baking powder
- 2 1/4 cups (500 ml) heavy cream
- 1-2 teaspoons vanilla extract
- 2 teaspoons sponge cake stabilizer
Preheat the oven to 390 F (200 C).
Put the butter and sugar into a mixing bowl and beat until fluffy.
Add the eggs one at a time, beating for 2 minutes between each addition.
Add the sponge stabilizer and beat for another 3 minutes.
Sift the flour and baking powder at least three times.
Using a rubber spatula, carefully fold the flour mixture and heavy cream into the batter.
Stir in the vanilla extract.
Use an ice cream scoop to divide the batter between the cupcake cases – 24 in total.
Bake in the preheated oven for about 20 minutes.
Leave to cool while you make the fluffy Angel Feather icing, you can find the recipe here.
Transfer the icing to a piping bag fitted with a Wilton 1B tip and make one simple swirl on top of each cupcake.
