Hello everyone, today’s temptatios are these pretty pastel meringue buttons.

They are prefect for cake decoration, or on top of a cupcake.

So pretty!

I make these buttons using the Vanilla Bean Frosting, here is the recipe:

Vanilla Bean Frosting:

  • 7 egg whites
  • 2 cups (450 g) regular sugar
  • 1 vanilla bean, split lengthways and seeds scraped out
  • A few drops food coloring

Put the egg whites, sugar and seeds from the vanilla bean into a large bowl.

Place the bowl over a saucepan of simmering water and whisk by hand for about 4 minutes, or until the sugar has dissolved.

Transfer the mixture to the bowl of a freestanding electric mixer and beat on low speed for about 4 minutes. Increase the speed and beat for another 3-4 minutes, or until the bowl no longer feels warm to the touch.

If you want the buttons to have a lovely pastel shade, add a drop or two of food coloring and mix for another minute.

Transfer the meringue mixture to a piping bag fitted with a Wilton 1A tip and pipe small buttons on to a lined baking tray.

Add pressure to the tip, then lift tip up and away to create a peak at the top.

Bake for about one hour in a 220 ˚F (100 ˚C) oven. Turn the oven off and leave the meringues in there for at least one hour, or preferably overnight.

The mini meringues are now ready. Use them as a pretty garnish for ice cream desserts or decoration for cakes or cupcakes, or enjoy them just as they are.
