These irresistible pastel marshmallows are made using silicone molds, cute or what?

Here is the recipe, enjoy!

Homemade marshmallows
  • 6 tablespoons gelatine powder
  • 1 cup (240 ml) cold water
  • 3/4 cup + 1 tablespoon (200 ml) water
  • pinch of salt
  • 3 1/3 cups (700 g) regular sugar
  • 1 2/3 cup (400 ml) liquid glucose or light corn syrup
  • 5–7 drops cotton candy essence
  • Wilton food colorings; sky blue, pink and yellow
  • 2 teaspoons vanilla extract
  • powdered sugar, for dusting

Put the gelatine powder and the cold water into a small bowl and stir to mix.

 Set aside for now.

Bring out the liquid glucose or light corn syrup, water, salt and sugar.

Put the water, salt and sugar into a saucepan and bring to the boil. Boil until the temperature reaches 240 ˚F/115 ˚C, this will take about 10 minutes.

Pour into a bowl.

Heat the gelatine mixture in the microwave oven for about 30 seconds or until liquefied.

Pour the gelatine mixture into a mixing bowl with the liquid glucose/light corn syrup and whisk on low speed for a few minutes.

Add the hot sugar syrup while whisking on low speed.

Use caution – it’s very hot!

Increase the speed to medium.

Whisk for about 8-9 minutes until nice and fluffy.

Add the cotton candy essence here if using, the vanilla extract and the food coloring of your choice. I only use one drop of soft pink food coloring, but if you prefer a stronger color just add a couple drops more.

I just love pink…

Transfer the mixture to a piping bag fitted with a wide circular tip, such as a Wilton 1A tip.

Spray the molds with some non-stick baking spray. Don’t skip this step…

You have to work quickly here as the mixture starts to set straight away.

Dust with some powdered sugar and leave to dry for at least 5 hours.

Just sweet…

Perfect for children’s parties…

Here I’ve used a cake dummy to make a cute display.

I love it 🙂 Decorate with some lovely pastel colored candy, cute ribbons or whatever your heart desires.

Use whichever molds you prefer…

Pop them out of the molds and roll into some more powdered sugar.

You could use other type molds too, they don’t have to be silicone. Just remember to spray with non-stick baking spray before using.

These are just perfect for a baby shower…
