Today I’ll show you how I make my Mediterranean style breakfast buns; soft and fluffy buns with the addition of potatoes and feta cheese to make them very special.

Here is the recipe, enjoy!

Mediterranean Style Breakfast Buns (Yield: 12)

  • 1 3/4 oz. (50 g) fresh yeast
  • 1 cup + 1 tablespoon (250 ml) tepid milk
  • 1/4 cup (60 g) regular sugar
  • 1/4 cup (50 ml) sunflower oil
  • 3 1/2 oz. (100 g) feta cheese , crumbled
  • 1 medium boiled potato, grated
  • 2 1/2 cup (315 g) all-purpose flour
  • 1 teaspoon salt

Plus:

  • 1 egg white
  • black sesame seeds or nigella seeds

Preheat the oven to 350 ˚F (180 ˚C).

Dissolve the yeast in the tepid milk. Leave it for 15 minutes, or until bubbles appear on the surface.

Put the remaining ingredients into a mixing bowl.

Add the yeast/milk mixture.

Using the dough hook attachment, knead the dough until it’s smooth and elastic.

Place the dough in a clean bowl and cover with a tea towel.

Leave the dough to rise for 30-40 minutes, or until doubled in size.

Dust your work surface with flour.

Divide the dough into 12 equally sized pieces and shape into smooth round buns.

Arrange the buns on a lined baking tray. Leave to prove for another 10 minutes or so.

Brush the buns with the egg white and sprinkle with some black sesame seeds or nigella seeds.

Bake in the preheated oven for about 25 minutes.

Now nothing remains but to enjoy these super soft and delicious buns…

Perfect for breakfast, or with a salad.
