If you like fudge and vanilla you will love these blondies. They are called blondies because of the white chocolate.
The secret here is the addition of homemade crème pâtissière – one bite and you’re hooked…
Pure Platinum Blondies
- 1 cup (230 g) butter
- 9 oz. (260 g) white chocolate
- 2 cups (440 g) regular sugar
- 5 large eggs
- 1 ¼ cup (160 g) all-purpose flour
- 5 ¼ oz. (150 g) homemade crème pâtissière
- 2 teaspoons pure vanilla extract
Preheat the oven to 350 ˚F (180 ˚C).
Melt the butter and white chocolate in a bowl over a saucepan of simmering water. Turn off the heat, but leave the bowl where it is.
Add the sugar and stir for about 1 minute until the sugar has dissolved.
Remove the bowl from the heat and add the eggs one at a time, stirring a little between each addition.
Add the flour, crème pâtissière and vanilla extract and stir until everything is well blended.

Grease and line an 8×12-inch (20×30 cm) brownie pan.
Scrape the batter into the prepared pan and bake for 30 minutes, no longer.
Leave to cool completely and place in the freezer for one hour.
Cut into squares and drizzle over this vanilla glaze, if you like:
- 1-1 1/2 cup (125-200 g) powdered sugar
- 1-2 tablespoons milk
- 1/2 vanilla bean, split in half and seeds scraped out
Mix until smooth and drizzle over these delicious Pure Platinum Blondies…
