The recipe for these Moon pies is from my book Just Sweet. Moon pies are soft vanilla cookies topped with a fluffy meringue topping, then covered in chocolate… so good.
Moon pies (Yield: 35)
- 6 large eggs, separated
- 2/3 cup (150 g) regular sugar
- 1 tablespoon water
- 1 vanilla bean (halved lengthways and seeds scraped out)
- 1 cup + 2 tablespoons (145 g) all-purpose flour
- 2 tablespoons corn starch
- 3/4 teaspoon cream of tartar (or a few drops of lemon juice)
- 3/4 cup (100 g) powdered sugar
Preheat the oven to 395 ˚F (200 ˚C).
Put the egg yolks into a mixing bowl with half the sugar, water and the seeds from the vanilla bean and whisk until pale and fluffy.
Reserve the egg whites for later.
In another bowl, whisk the egg whites with the cream of tartar (or a few drops of lemon juice) and whisk until frothy.
Add the other half of the sugar and continue whisking.
Sift together the flour and corn starch at least five times.
Fold the whisked egg whites into the egg yolk mixture in three additions, followed by the flour mixture.
Transfer the mixture to a piping bag fitted with a wide circular tip, then pipe small rounds onto a lined baking tray.
Dust with powdered sugar and bake in the preheated oven for about 8-10 minutes.
Leave to cool completely.
Pipe a generous mound of vanilla bean frosting on top, you can find the recipe for vanilla bean frosting here.
I use a wide circular tip for this.
Place in the freezer for 10 minutes.
Melt some chocolate and cool slightly.
Drizzle the melted chocolate over the frosted cookies…
Now nothing remains but to enjoy…
