White Chocolate Cupcakes (Yield: 16)

  • just under 1/2 cup (100 g) butter
  • 3/4 cup (165 g) regular sugar
  • 2 eggs
  • 1 2/3 cups (200 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup (125 ml) milk
  • 3 1/2 oz. (100 g) white chocolate, melted

Preheat the oven to 350 ˚F (180 ˚C).

Put the butter and sugar into a mixing bowl and beat until fluffy.

Add the eggs one at a time, beating well between each addition.

Add the flour, baking powder, milk and melted white chocolate.

Stir until well blended.

Line a cupcake tray with paper cases. Use an ice cream scoop to make equally sized cupcakes, one scoop per paper case.

Bake in the preheated oven for about 20 minutes.

Leave to cool completely.

I added a drop of food coloring here, turquoise from Americolor.

Fluffy yumminess.

Transfer the frosting to a piping bag fitted with a Wilton 1B tip and pipe 3 overlapping swirls on top of each cupcake.

So pretty and so very yummy!

Leftover frosting? Just pipe small swirls onto a lined baking tray and bake in a 212 ˚F (100 ˚C) oven for one hour.

Turn the oven off and leave the mini meringues in there to dry out for a few hours before using.

    Åh, älskar verkligen vit choklad. Det här är nog något för mig! 😀 
    Undrar med den här vanilla bean frostingen, till hur många cupcakes räcker en sats?

    De så deilig ut, som alt annet du lager, men disse måtte jeg bare lage. De ble kjempegode, og frostingen var som  fløyen!! Helt nydelig. :-)

    Lurer virkelig hvor du får alt fra! Du er så utrolig flink! Dette må bare prøves. Jeg får ikke bakt mer før jeg kommer meg inn i ny leilighet, men forhåpentligvis med mye besøk blir det masse bakst å få av meg :-) Veldig moro å bake. Skulle nesten hatt mitt eget bakeri snart hvis jeg skal tjene på alle utgiftene hihi!

    Hei Manuela! Prøvde å lage sånne pikekyss av frostinga som va igjen etter å ha pynta 12 cupcakes. Lagde topper i kvit, rosa og turkis og var så fornøgd me korleis dei såg ut. Satte dei i ovnen på 100 grader i en time og dei sto i ovnen til neste morning. Men dei er fortsatt klissete og mjuke. Ka har eg gjort feil?
