I’m continuing with the Valentine’s Day theme here on Passion4Baking.
Today I made this gigantic cookie topped with chocolate mousse and whipped cream.. perfect to make for your Valentine…
Here is the recipe, enjoy!
Giant Valentine Cookie
- 1/2 cup (120 g) unsalted butter
- 1 cup (125 g) all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup (75 g) regular sugar
- 1/2 cup (100 g) brown sugar
- 1 large egg
- 5 oz. (150 g) dark chocolate chips
Put the flour, baking soda and salt into a small bowl.
Put the butter, sugar and brown sugar into a mixing bowl and beat until fluffy.
Add the egg and continue beating.
Add the vanilla extract, I use Madagascar Natural Vanilla Extract, Double Strength from LorAnn Oils.
Add the flour mixture and beat for 30 seconds.
Add the chocolate chips.
Stir until well blended.
I use a heart shaped pan with a removable base.
Bake in the middle of a 375 ˚F (190 ˚C) oven for about 30 minutes.
Leave to cool completely.
Simple chocolate mousse
- 3 1/2 oz. (100 g) dark chocolate
- 1 1/2 tablespoons (25 g) butter
- 3 egg whites
- 1/2 cup (120 g) regular sugar
Melt the chocolate using a bain marie, or in the microwave oven.
Leave to cool.
Whisk the egg whites in a mixing bowl.
When the egg whites are frothy, add the sugar and continue whisking for about 3-4 minutes.
Add the melted chocolate and fold it in with a rubber spatula.
Pour the chocolate mousse mixture on top of the giant cookie.
Spread it out to make an even layer.
Chill for at least two hours.
Now remove the heart shaped pan.
I used whipped cream to decorate. Transfer the cream to a piping bag fitted with a 1M tip and make little swirls.
- 1/2 cup (125 ml) heavy cream
- 3 tablespoons regular sugar
Top with some mini heart shaped candy, if you like…
So easy to make, and so good…
The combination of chocolate chip cookies and chocolate mousse is a match made in heaven…
