Fluffy Whoopies

Good morning everyone.

I made these for the girl next door for her birthday, they are super fluffy and perfect for a child’s birthday party.

All kids love marshmallows…

Here is the recipe, enjoy!

Fluffy Whoopies

  • 4 1/2 teaspoons gelatin powder
  • 1/2 cup (125 ml) cold water
  • 3/4 cup (170 g) regular sugar
  • 1/2 cups (125 ml) glucose
  • 1/4 cup (65 ml) water (extra)
  • 2 teaspoons vanilla extract

Stir together the 1/2 cup (125 ml) cold water and the gelatin powder and set aside for 5 minutes.

Put the sugar, half the glucose and the water into a pan and bring to the boil. Boil until the temperature reaches 250 ˚F/120 ˚C.

Put the remaining ¼ cup (65 ml) glucose into a mixing bowl and beat on a low speed. Heat the gelatin in the microwave for 30 seconds, then pour it into the mixing bowl.

Carefully pour in the boiled sugar mixture (which is 250 ˚F/120 ˚C) into the mixing bowl and beat on a low speed for 5 minutes.

Increase the speed to high and mix for another 5 minutes and add the vanilla.

Mix for another 5 minutes.

I use a Whoopie silicone mat from Silikonmart, and a wide, circular tip.

Grease the mat with some non-stick baking spray, then pipe out little mounds of marshmallow mixture.

Now dust liberally with powdered sugar and leave them for 5 minutes, then remove from the mat and roll in some more powdered sugar.

Or, sprinkle over some nonpareils or sprinkles.

Leave to dry for 5 minutes.

Roll in some powdered sugar, and they’re done.

I made an extra batch of the marshmallow mixture to use as a “filling”. Pink, of course..

Pipe onto one of the white marshmallow pillows and sandwich together to make it look like a whoopie pie.

Repeat with the remaining marshmallows.

    To stykk fornøyde jenter nøt herlige cupcakes i bilen, klarte ikke vente til vi kom hjem.

    Jeg forstod ikke helt det med melisen. Må jeg rulle hele “kaken” i melis etter jeg har samlet dem eller er det bare der fyllet tyter ut? 
    Litt usikker på hva melisen skal gjøre godt for så må bare spør :-)

    Prøvde med Stevia flytende vanilje, men d fikk en uheldig ettersmak. Skulle kanskje brukt en del mindre enn med vanlig vaniljeekstrakt?

    1. Kan jeg bruke lys sirup istedefor glukose?
    2. Kan jeg bruke gelatinplater istedefor gelatinpulver og isåfall hvor mange?

      Hei Cecilie, man kan bruke lys sirup eller corn syrup istedet for glukose. Men i akkurat denne oppskriften går det dessverre ikke med gelatinplater istedet for pulver.

    Can I use glucose powder instead of liquid glucose in this recipe? If yes, how and in wich amount? If no, how can I replace glucose in this recipe?

      Hi Maria, you could use light corn syrup instead of the liquid glucose in this recipe.

    than you write;
    -Put ¼ cup (65 ml) glucose into a mixing bowl and beat on a low speed. Heat the gelatin in the microwave for 30 seconds, then pour it into the mixing bowl.
    but in your recipe you have just 65 ml glucose…

    I find another your recip :))

    first step we will use half glucose (60ml) to boil…. ok…. :))

      Hi Gulcan uysen, that’s right, in this recipe you use half the glucose in the first step and then the remaining half in the next.
