Black and White (pink) Cookies

Hello everyone!

When I was in New York last year I visited the well-known bakery called Baked, which is located in Brooklyn 359 Van Brunt Street.

These are the Baked bakery’s signature cookies, but I made them with a pink frosting here.

Black and White (pink) Cookies, recipe by Baked

(yield: 18 cookies)

  • 3 cups (375 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • Just under 1 cup (200 g) unsalted butter
  • 3/4 cup (170 g) regular sugar
  • 2 large eggs
  • 1 egg yolk
  • 200 ml buttermilk
  • 1 tbsp vanilla extract
  • 1 tbsp finely grated lemon zest

 

Put the butter and sugar into a mixing bowl and beat until fluffy.

Add the eggs and egg yolk, one at a time, mixing well between each addition.

Sift the flour, baking soda, baking powder and salt into a separate bowl.

Add the flour mixture and the milk in two batches, alternating the dry and the liquid ingredients.

Beat until everything is well blended.

Add the vanilla and grated lemon zest and mix again.

Line three baking trays with baking parchment.

Use an ice cream scoop to make equally sized cookies, about 6 mounds per lined baking tray.

Bake in a 350 ˚F (180 ˚C) oven for about 17 minutes.

Leave to cool completely.

Icing:

  • 2 cups (250 g) powdered sugar 
  • 5 tablespoons milk
  • 3 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • 1/2 cup (60 g) cocoa powder + 1 tablespoon boiling water (optional)

 

Put the powdered sugar, milk, cream and vanilla into a bowl and mix until smooth.

Add some pink food coloring, or leave it as it is if you prefer.

Ice half of each cookie with the pink (or white) icing.

Add chocolate and boiling water to remaining icing and stir until smooth.

Spread chocolate icing over second half of each cookie.

Allow cookies to set, about 15 minutes.

    De så veldig gode ut!! Hvor lange holder de seg i kakeboksen? Planlegger 30-års bursdag, og bra med alt som kan bakes i god tid :-) Mvh Elin
