One of my favorite frosting: Marshmallows Frosting

Marshmallows frosting

  • 3 cups (675 g) regular sugar
  • 6 egg whites
  • 1/2 cup (125 ml) water
  • 1 teaspoon lemon juice
  • 2 teaspoons vanilla extract

This makes quite a lot of frosting, you may consider halving the recipe.

Put the egg whites and lemon juice into a mixing bowl.

Put the sugar, water and vanilla extract into a saucepan and give it a quick stir.

Place the saucepan on the heat and cook the mixture until the temperature is 248 ˚F (120 ˚C). Use a sugar thermometer if you have one.

When the sugar syrup is 248 ˚F (120 ˚C), whisk the egg whites until frothy. Add the sugar syrup a little at a time, still whisking.

Continue whisking until very fluffy, about 5 minutes. Do not overmix.

Add a few drops of pink food coloring if you want a beautiful pink color.
