I love to make and to eat marshmallows at Christmas time, and these Christmas mallows also make a great little gift.
Here is the recipe, enjoy!
- Vanilla Marsmallows (you can find the recipe here)
2 cups (200 g) desiccated coconut, finely ground
pink food coloring
Make Vanilla marshmallows as described here, but add pink food coloring with the vanilla extract and whisk for another 30 seconds.
Just omit the food coloring if you prefer white marshmallows.
I use a silicone mold like the one shown here, spray the cavities with non-stick baking spray.
Transfer the marshmallow mixture to a piping bag fitted with a wide circular tip, then fill the cavities with the mixture.
Leave to set for 10 minutes.
Finely grind the desiccated coconut in a blender. You can of course use the coconut as it is, but I think the finish is prettier this way.
Knock out the Christmas mallows from the mold and roll in the coconut.
Leave them to dry for a few hours, then put into a plastic bag.

If you don’t have a mold like the one I’m using here, just use the piping bag and the wide circular tip, then pipe little rounds onto a greased sheet of baking paper.
Leave to dry for 10 minutes, then roll in the coconut as described above.
