The weekend is here and maybe you got some time to bake some delicious snickers cookies.


These snickers cookies are oh…my goodness so good. They taste just like the famous snickers, only better.

These cookies are made with almond and salted peanuts that I have used a nut grater for to get grounded, plus I added jell- o pudding instant vanilla in the mixture, it is all blended in a delicious whipped meringue, pipe onto a baking tray in medium size circles and baked for about 10-15 minutes.
After baking, i cooled this down and I added 1 teaspoon of salted caramel in the middle of the cookie added some salted peanuts on top, added another cookie on top and drizzled the top it with delicious dark chocolate
Oh … my goodness it is so delicious, go make it and share it with the once you love.

SNICKERS COOKIES ( Yields 25-30 filled cookies) 

  • 250 g EGG WHITES
  • 450 g SUGAR
  • 100 g GROUND ALMONDS
  • 125 gram GROUND SALTED PEANUTS
  • 75g JELL-O PUDDING-INSTANT VANILLA OR ANOTHER BRAND

 

FOR THE FILLING:

 

FOR THE TOPPING;

  • 2-3 OZ. DARK CHOCOLATE,  MELTED 

 

PREPERATION FOR THE SNICKERS COOKIES

  1. Preheat oven to 320F / 160 C°
  2. In a large bowl, whip egg whites until stiff peaks form. Slowly add the sugar while beating the egg whites on low speed.
  3. In a medium bowl, blend the ground almonds and ground salted peanuts with the Jell-O Pudding-Instant Vanilla    
  4. With the use of a spatula, carefully fold in the almond/peanuts / Jell-O Pudding-Instant Vanilla mixture with the egg whites.
  5. Fill a pipping bag with the mixture, cut of the end of the pipping bag
  6.  Pipe circles on a baking tray ,
  7. pipe each circle not to close to each other.
  8. Bake in the middle of the oven for about 10-15 min, or until set.
  9. Let the meringue cookies cool completely before you fill them
  10. Fill the cookies with 1 teaspoon salted caramel ( you can find the recipe here )  and top it with another cookie.
  11. Melt the chocolate and drizzle on top,
  12. When the chocolate is firm enjoy

  1. This looks delicious. What exactly is Jello pudding. I’m from South Africa and would like to make this but don’t think we get the exact same brand. Would any type of instant pudding work? Thank you!!
