sweet valentines

Hello everyone!

These are perfect for Valentine’s Day; vanilla cookies with a pink bubble gum royal icing..

Here is the recipe, enjoy!

Sweet Valentines Cookies (Yield: 35)

  • 6 cups (750 g) all-purpose flour
  • 1 teaspoon salt
  • 2 cups (450 g) unsalted butter
  • 1 3/4 cup (400 g) regular sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Put the butter and sugar into a mixing bowl and beat until fluffy.

Add the eggs and beat for another minute.

Add the flour little by little, beating until well blended.

When the dough clumps together into a ball, it’s done.

Divide the dough in two, form both into fat discs and wrap in plastic wrap.

Put them in the fridge to rest for 45 minutes.

Roll the dough out between two sheets of baking parchment.

Cut out your shapes, I use a heart shaped cookie cutter.

Arrange on a lined baking tray and place in the freezer for 15 minutes.

Bake in a 320 ˚F (160 ˚C) oven for about 15 minutes.

Leave to cool completely.

Bubblegum Royal Icing

  • 3 1/2 cups (450 g) powdered sugar
  • 5 tablespoons meringue powder
  • 6 tablespoons hot water
  • 1-2 drops bubblegum essence (you can use another essence of your choice, or leave it out)
  • 1 tablespoon liquid glucose (optional)
  • Pink soft gel from Americolor

Put the meringue powder and powdered sugar into a mixing bowl and mix for one minute.

Continue to beat when adding the hot water, bubblegum essence and glucose, if using.

First pipe the outline of the cookie, I use the smallest circular tip from Wilton for this.

When you are ready to ice the center of each cookie you may need to add some extra water to the icing.

I decorated some of the cookies with some extra vintage candies… arrange them on top of the royal icing before it sets.
