Hello everyone, I hope you are all well.
Readers have asked med to make cakes using After Eight, and here are some lovely After Eight cupcakes! This recipe can be used to make 12 cupcakes or one large cake.
If you prefer plain chocolate cupcakes – just omit the After Eight.
Here is the recipe, enjoy!
After Eight Cupcakes (yield: 12 medium cupcakes)
- 2/3 cup (150 g) regular sugar
- 1/2 cup (110 g) butter, at room temperature
- 2 eggs
- 2/3 cup (80 g) all-purpose flour
- 1/4 cup (30 g) pure unsweetened cocoa powder
- 1 1/2 teaspoon baking powder
- 2 teaspoons stong coffee, cooled
- 3 1/2 oz. (100 g) dark chocolate
- 12 After Eight chocolates
You don’t have to use a mixer for this recipe, a good whisk is all you need.
Put the chocolate and butter into a bowl and melt in the microwave, 1-2 minutes.
Stir until everything is melted and smooth.
Now add the eggs, whisk until well blended.
The batter will thicken as soon as the eggs are added…
Now whisk in the sugar.
Mix the flour, cocoa powder and baking powder in a separate bowl.
Tip the dry ingredients into the batter and stir until everything is well blended.
Line a cupcake pan with paper cases. I use these pretty paper cases from Siluett…
Bring out the After Eight chocolates…
Add 1 tablespoonful of batter into each of the paper cases, then put one After Eight on top.
Then add one tablespoonful of batter on top of the After Eight.
Bake in a 350 F (180 C) oven for about 20 minutes. It’s important not to overbake them, you want them to be a little fudgy inside…
After Eight frosting
- 10 After Eight chocolates
- 1 3/4 oz. (50 g) dark chocolate
- 1/4 – 1/2 cup (60-120 ml) heavy cream
Put all ingredients into a bowl and heat in the microwave for about 1 minute.
Stir until smooth and glossy.
Add a tablespoonful of the frosting to each of the cupcakes.
I’m decorating my cupcakes with some pink ribbon sprinkles today…
I’ve also made some marzipan roses, the perfect decoration for these cupcakes.
To make these roses I use extra white marzipan with a little pink food coloring from Squires Kitchen.
