Hello everyone, I hope you are all well.
We all have a favorite cookie, and this is definitely my all-time favorite…
Here is the recipe, enjoy!
Chocolate Dream Cookies
- 1/2 cup (115 g) butter
- 9 oz. (250 g) dark chocolate
- 1/2 cup (60 g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs, at room temperature
- 1 1/4 cup (280 g) regular sugar
- 2 teaspoons vanilla extract
- 12 oz. (340 g) chocolate chips
- 9 oz. (250 g) walnuts (or a mixture of walnuts and pecans)
Melt the butter, then add the dark chocolate.
I use a top quality chocolate here, Callebaut 89%, which makes the cookies super delicious…
Stir until everything is melted and smooth.
Set aside to cool for at least 5 minutes, stirring once or twice.
Now you’ll need 3 large eggs.
Crack the eggs into a mixing bowl and whisk for one minute.
Then add the sugar, little by little.
Whisk until pale and fluffy.
This will take about 5-8 minutes.
Add the slightly cooled chocolate/butter mixture to the whisked egg mixture.
Whisk a little more…
…until everything is well blended.
The consistency should be something like this:
Time to add the dry ingredients.
Mix together the flour, baking powder and salt.
Add the flour mixture to the batter and beat for one minute until everything is well blended.
Use a rubber spatula to stir in the chocolate chips, or use regular chopped chocolate instead if you like.
Stir in the walnuts…
The result should be a nice and shiny chocolate batter.
I use an ice cream scoop to make the cookies, one scoop per cookie.
Arrange the mounds of cookie dough onto lined baking trays.
Bake in a 320 ˚F (160 ˚C) oven for about 20 minutes.
Leave to cool on the tray for at least 10 minutes.
Yum! Did I mention that these are my absolute favorite cookies…?
They are crunchy on the outside and soft on the inside…
Perfect with a cup of tea or coffee.
