Hello everyone!

Today I’m going to tempt you with these “I love you” sugar cookies, perfect for Valentine’s Day or as a weekend treat.

I topped some of the cookies with Angel feather icing, just to give them that pretty look, and to make them even more delicious…

Here is the recipe, enjoy!

Soft Sugar “I Love You” Cookies:

  • 1 cup (225 g) butter, softened
  • 225 g melis
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup (225 ml) sour cream
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 2/3 cups (450 g) all-purpose flour
  • 1/3 cup + 1 tablespoon (50 g) vanilla pudding powder

Preheat the oven to 350 ˚F (180 ˚C).

Put the butter and powdered sugar into a mixing bowl and beat until fluffy.

Add both eggs…

…and the sour cream.

Beat until everything is well blended, about 2 minutes.

Put the baking powder, baking soda, salt, flour and vanilla pudding powder into a separate bowl and stir to mix.

The butter/egg mixture is fluffy now…

Add the vanilla extract.

Tip in the flour mixture and stir until well blended.

Done!

Wrap the dough in plastic wrap and chill for about an hour, or longer.

Dust your work surface with some flour.

Add some extra flour if the dough is too sticky to roll out.

Roll out the dough.

Here I use these cute “Message in a Cookie” stamps/cookie cutters from Williams Sonoma.

Arrange on lined baking sheets and bake in the preheated oven for about 10 minutes.

Leave to cool on a wire rack before glazing or decorating.

I decorated some of them with marzipan, a little bit of lemon glaze first to act as “glue”, and then the marzipan on top.

I also made some cookies which I topped with a pastel colored Angel feather icing. You can find the recipe for the icing here.

I transferred the icing to a piping bag fitted with a Wilton 1M tip and piped roses on top of the cookies.

This is very popular with my children: cut a hole in the center of the cookies, place a boiled candy in the hole before baking. The candy will melt and make a beautiful “window”.

  4. Oh, dear! Så flotte! Skikkelig fin kunst, er det jo. Kanskje jeg skal prøve disse sugar cookies. Men de med smeltet godteri i midten, det var veldig kult! 
    Hvordan skal godteriet være? Hard, mykt som toffee, eller gelé-godt? Klistrer det seg ikke til stekeplaten?
