Hello everyone, I hope you are all well.

People often ask me about babyshowers and ideas for babyshower cakes and cupcakes. Today’s temptations are perfect for a babyshower – chocolate and vanilla filled cupcakes.

Chocolate & vanilla filled cupcakes

  • 3/4 cup + 1 tablespoon (200 g) butter, at room temperature
  • 1 1/4 cup (270 g) regular sugar
  • 4 eggs, at room temperature
  • 2 1/4 cups (290 g) all-purpose flour
  • 3 teaspoons baking powder
  • 1 1/4 – 1 2/3 cup (300-400 ml) heavy cream
  • 2 teaspoons vanilla extract, or the seeds from 1 vanilla bean
  • Shop-bought chocolate pudding or very thick vanilla custard

 

Bring out everything you need.

The butter and eggs should be at room temperature before you start.

Put the butter and sugar into a mixing bowl and beat until fluffy.

Add the eggs, one at a time.

Beat for 2 minutes between each egg, adding the vanilla with the last egg.

Put the flour and baking powder into a separate bowl and stir to mix, then sift at least twice for extra airy cupcakes.

Tip the flour mixture into the mixing bowl.

Pour in the cream.

Mix on low speed, or use a rubber spatula.

Divide the batter between cupcake paper cases, I use an ice cream scoop to get equally sized cupcakes – one scoop per paper case.

Add 1 teaspoon chocolate pudding or very thick vanilla custard into the center of each cupcake.

Bake in a 390 F (200 C) oven for about 25 minutes.

 

The kitchen smells heavenly!

Leave to cool completely before decorating.

One little swirl around the edge of the cupcakes…

…and then a personalized marzipan disc on top.

I made these marzipan discs using white marzipan and food colorings from Squire Kitchen (Rose and Baby Blue), and fondant/sugarpaste stamps (or unused, regular rubber stamps).

Roll out the marzipan and impress the design/stamp of your choice.

You could also use a textured rolling pin, you can find baby shower themed rolling pins at thecakedecoratingcompany.co.uk.

Use a cutter to cut out the designs.

Simple, but beautiful babyshower cupcake decorations!

You can of course just decorate with frosting and sprinkles.

  1. å så nydelige de så ut! det er utroolig hvor kreativ du er, du kan trylle frem de lekreste søtsaker og deler med oss andre =) jeg lurte på om du kunne lage en sånn rutete kake, som et sjakk-brett. det er som et sjakk-brett når du skjærer kaken. jeg så på tv en gang og fikk lyst til å prøve, men vet ikke akkurat hvordan jeg skal få det til.
