Hello everyone, I hope you are all well.

These pretty cake pops are made with vanilla cake and lemon curd, both sweet and tangy flavors at the same time.

The perfect weekend activity with the kids!

Here is the recipe, enjoy!

 

Cake Pops

  • 1/2 vanilla cake base (I use half a 8-inch cake)
  • 4 tablespoons lemon curd (or frosting, if you prefer)
  • white chocolate
  • pretty straws or lollipop sticks
  • sprinkles or fondant

 

Crumble the cake into a large bowl or pan.

You’ll also need lemon curd, you can find my recipe here.

Add the lemon curd and mix into the crumbled cake.

The mixture should be moist enough to roll into small balls and still hold a round shape. You could use a small ice cream scoop to help you make equally sized balls.

Freeze for 15 minutes.

Melt some chocolate in a bowl suspended over a pan of simmering water, I use white Callebaut chocolate here.

Today I’m using these super cute straws for my cake pops, you can get them here.

One at a time, dip the tip of a straw or lollipop stick into some melted chocolate.

Then insert the lollipop stick straight into a cake ball, pushing it no longer than halfway through.

Repeat with the remaining cake balls.

It’s very important that the balls are very cold at this stage, or they’ll easily fall off the stick/straw!

Now dip the entire cake ball into the melted chocolate until it is completely covered.

Rotate the lollipop stick stick if necessary to allow the excess chocolate to fall off evenly.

Repeat with the remaining cake balls.

I decorated my cake pops with super cute pastel colored decorations.

Some of them are homemade (fondant and First Impression molds) and some of them are from Wilton.

Decorate the cake pops before the chocolate is completely set.

    dette må jo testes,rålekkert.Må bare fortelle deg at jeg kjæpte ferdig cupcakes pakke på butikken og tenkte nei må ha no vaniljesmaaak ,helte oppi en dæsj med tine vaniljesaus i røra og gjett om dem ble gode a ,åhhhhhhh her blir det vailjesaus i diverse cup-cakes for de ble så lette som fjær 🙂
