This cake is such a flavorful and refreshing treat, perfect to enjoy in the garden…

Make it in advance and keep in the freezer until you need it.

Here is the recipe, enjoy!

 The Oreo base:

  • 2 packets Oreos (remove the cream filling)
  • 6 tablespoons (85 g) butter

Crush the cookies and melt the butter in the microwave oven.

Stir to combine.

Press the cookie- and butter mixture into the base of a pie dish or a regular round cake pan. The one I’m using here is 12 inches (30 cm).

Place in the freezer for about 10 minutes.

Oreo & Strawberry Cheesecake:

  • Oreo base (as described above)
  • 1 packet strawberry jelly (made with 1/4 cup / 50 ml water only) or 1 packet concentrated strawberry jelly from Harley’s.
  • 10 oz. (300 g) Philadelphia cream cheese
  • 1 vanilla bean
  • 1 1/4 cup (300 ml) heavy cream, whipped
  • 3/4 cup + 1 tablespoon (200 g) regular sugar
  • fresh strawberries, to decorate (optional)

Put the cream cheese into a bowl with the sugar and the seeds from the vanilla bean. Beat until light and airy.

The vanilla seeds in this cake make such a difference!

I like to use a packet of Strawberry jelly from Hartley’s, it’s so concentrated and very suitable for this cake.

This jelly just needs to be heated in the microwave for 10 seconds…

Add the whipped cream and cooled jelly into the cream cheese mixture.

Use a rubber spatula and stir until everything is well blended.

Remove the Oreo base from the freezer and arrange some fresh strawberries over the top.

Spread the cream cheese mixture on top of the strawberries.

Place in the freezer until set.

When you are ready to serve, remove the cake from the freezer, release it from its pan and place on a cake stand or plate.

I love the fluted edges on this cheesecake…

Ok so just a little taste… It looks so pretty when the fresh strawberries are peeking out of their cheesecake blanket…

So velvety, so yummy…

Perfect for a summer garden party.

I’ve decorated this cake with some cute pink marshmallows, just because I love pastel colors.. but you already knew that, didn’t you…;-)

Feel free to decorate with fresh fruit or any berries you like.

    May i know please the packet of oreo consist of how many pieces ? 
    The one in my country is 6 pieses only . Is it the same?
