Hello everyone, I hope you’re all enjoying the summer.
Today’s temptation is perfect for summer. When I lived in Arizona as a teenager we enjoyed ice creams, cordials and ice tea to endure the heat, and when I visited one of my friends we were often served homemade yogurt popsicles.
It’s very refreshing, and very quick and easy to make.
Here is the recipe, enjoy!
Strawberry & Raspberry Yoghurt Popsicles:
- 1 packet strawberry jelly powder
- 1/3 cup + 1 tablespoon (100 ml) water
- 3 1/3 cups (800 ml) natural yogurt
- 3 1/2 oz (100 g) fresh raspberries or 1 3/4 oz (50 g) raspberry purée
- 1/2 cup + 2 tablespoons (125 g) regular sugar
Bring out all the ingredients.
Pour the water into a saucepan and place on the heat.
When the water starts boiling, add the jelly powder and sugar. Stir well and simmer for 2 minutes.
Remove the saucepan from the heat.
Add the yogurt.
Stir until everything is well blended. Don’t you just love that pink color?
Add the raspberries (mashed) or raspberry purée.
Press the mixture trough a sieve to get rid of the seeds.
I didn’t have any popsicle molds available so used these cute cupcake paper cases.
Fill them almost all the way up and place in the freezer.
After about an hour in the freezer, put a popsicle stick into the center of each popsicle and return to the freezer until completely frozen.
Remove the paper cases and enjoy!
