I absolutey love the taste of lemon, and these lemonies are delicious little cakes with a lemon glaze, perfect for a girl’s night or with a cup of coffee, anytime…
Here is the recipe – enjoy!
- 2/3 cup (85 g) all-purpose flour
- 3/4 cup (170 g) regular sugar
- juice from 1/2 lemon
- finely grated zest from 1/2 lemon
- 2 eggs
- 1/2 cup (115 g) butter
- 1/4 teaspoon salt
Bring out everything you need, the butter must be at room temperature.
I used more lemon zest than stated in the list of ingredients (1 lemon instead of 1/2), simply because I just love lemon…
Put the eggs, lemon juice and zest into a bowl.
Whisk until combined.
Put the flour, sugar, salt and butter into a mixing bowl, beat until everything is well blended.
Add the egg mixture.
Beat for another 30 seconds, until everything is well blended.
I use a 4 x 6-inch (10 x 15 cm) pan for this, double the recipe if you’re using a 8 x 12-inch (20 x 30 cm) pan.
Bake in a 350 ˚F (180 ˚C) oven for about 25 minutes.
Fresh from the oven… smells like heaven!
Leave to cool.
- 1/2 cup (60 g) powdered sugar (I used 1 cup/120 g here to make a thicker layer)
- 1 tablespoon lemon juice (I used 2 tablespoons)
Put the powdered sugar into a bowl with the lemon juice and stir until smooth.
Pour over the cooled cake.
Spread out to cover the entire cake, using a knife or a palette knife to help you.
Cut into squares…
