Today’s temptation is super delicious and easy to make, this treat also makes a lovely present.
Here is the recipe, enjoy!
Peanut, Cranberry & Chocolate Brittle:
- 1 cup (230 g) butter
- 1 cup (225 g) regular sugar
- 1 teaspoon vanilla extract (optional)
- 1/4 cup (60 ml) water
- 2 oz. (50 g) dried cranberries
- 2 oz. (50 g) chocolate chips
- 5-7 oz. (150-200 g) salted peanuts
Line a baking tray with baking parchment and set aside.
Put the butter, sugar and water into a saucepan and place on a medium heat.
Stir all the time.
After a few minutes – add the peanuts. As you can see the mixture hasn’t browned yet, just continue stirring.
Add vanilla extract if using.
Continue stirring, the mixture should be darker than shown on the photo below.
When the mixture has a dark caramel color, pour onto the lined baking tray. Be careful – it’s extremely hot!
Sprinkle over the dried cranberries and chocolate chips (or whatever you fancy).
Leave to cool (about 30 minutes to an hour) before breaking into smaller pieces.
