Yesterday I made these fabulous cupcakes which are made with strawberry cheesecake ice cream and topped with a luscious white chocolate and banana frosting…
Here is the recipe – enjoy!
Strawberry cheesecake cupcakes:
- basic recipe for vanilla cupcakes (you can find the recipe here)
- 1 2/3 cup (400 ml) strawberry cheesecake ice cream, straight from the freezer
Make the cupcakes as described here, but replace the cream with the ice cream.
Use an ice cream scoop to divide the batter between the cupcake cases, one scoop per cupcake.
Bake in a 390 ˚F (200 ˚C) oven for about 20 minutes.
Leave to cool completely before frosting the cupcakes.
I used this frosting here, but add 1 mashed banana when you start the mixing.
Roll the tops into a bowl of pretty sprinkles.
Place a marzipan rose on top, if you like, I made these using a mold.
So cute, I just love the vintage look.
I use various molds to make pretty cake decorations like these.
