Today I’d like to tempt you with these delicious sweet buns with a vanilla cream center, one of my favorites.
Here is the recipe, enjoy!
Sweet bun dough:
- 2 2/3 cups (350 g) all-purpose flour
- 4 tablespoons (35 g) powdered milk
- 2 tablespoons (35 g) regular sugar
- 1/4 teaspoon salt
- 1 3/4 oz. (50 g) fresh yeast
- 3 large eggs + 1 egg yolk (use the leftover egg white for brushing)
- 1/4 cup (60 ml) tepid water
- 2/3 cup (150 g) butter
Topping
- Ready-made vanilla cream (thick custard)
- Desiccated coconut
Bring out all the ingredients.
Put all the dry ingredients into a mixing bowl.
Dissolve the yeast in the tepid water. Add the eggs and butter to the dry ingredients in the mixing bowl.
Add the water/yeast mixture.
Using the dough hook on the kitchen machine, knead for 20 minutes.
The dough may look too wet in the beginning, but give it 20 minutes and it’ll be perfect.
Don’t be tempted to add more flour… knead on medium speed.
Leave to rise for 45 minutes, room temperature.
After 45 minutes it should be doubled in size.
Preheat the oven to 350 ˚F (180 ˚C).
Make small buns from the dough, about 45 grams per bun.
Line baking trays with baking parchment and arrange the buns on the trays, or use muffin cases.
Leave to rise again, about 15 minutes.
Make a small indention in the middle of each bun with a spoon, and drop a spoonful of vanilla cream in the center.
Brush with some egg white before baking in the oven for about 10-15 minutes.
Remove from the oven and leave to cool.
Make the vanilla glaze by mixing together all the ingredients. Cover the top of each bun (minus the vanilla cream center) and then sprinkle over some desiccated coconut.
Vanilla glaze:
- approx. 2 1/2 – 3 cups (300–400 g) powdered sugar
- 1–2 tablespoons water
- a few drops vanilla extract
This is just so delicious..
