These fluffy dinner rolls are the perfect dinner accompaniment, or serve freshly baked rolls for the weekend breakfast.
Fluffy Dinner Rolls (yield: 12)
- 3/4 cup (175 ml) milk
- 1/4 cup (60 g) butter, cut into cubes
- 1 3/4 oz. (50 g) fresh yeast
- 3/4 cup (175 ml) tepid water
- 4 tablespoons regular sugar
- 1 teaspoon salt
- 3 1/4 – 3 2/3 cups (400–450 g) all-purpose flour
Preheat the oven to 350 ˚F (180 ˚C).
Pour the milk into a bowl, add the butter and heat in the microwave oven for 1 min 30 secs.
Dissolve the yeast in the tepid water.
Pour the milk/butter mixture and the yeast/water mixture into a mixing bowl.
Stir in the sugar and salt.
Add half the flour. Start mixing and kneading and gradually add the rest of the flour, holding back half a cup (50 g) or so, you may not need it.
Knead for at least 10-15 minutes.
Put the dough in a greased bowl, cover with plastic wrap and leave to prove for 20-30 minutes.
Tip out the dough on to your work surface and divide it into 12 equally sized pieces. (Or 24 if you prefer smaller rolls.)
Form them into round balls and place in a greased oven proof dish or pan.
Leave to prove again, about 10 minutes.
Bake in the preheated oven for about 15-20 minutes, or until golden.
Cool slightly before serving.
