Hello everyone, I hope you are all well.
These are my family’s favorite cookies; very crispy, almost like meringue, and the flavor is almost toffee-like.
You just have to try making these, I promise you’ll love them!
Crispy Chocolate Cookies
- 1 cup (230 g) unsalted butter, softened
- 1 1/3 cup (300 g) regular sugar
- 1 1/3 cups (265 g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon sea salt
- 5 1/2 oz. (160 g) flaked almonds
- 7 oz. (200 g) chocolate chips
Preheat the oven to 350 ˚F (180 ˚C).
Put the butter, sugar and brown sugar into a mixing bowl and beat until fluffy.
Add the eggs one at a time, beating between each addition. Add the vanilla extract and beat until fluffy.
Add the flour and baking soda and beat for one minute.
Stir in the sea salt, flaked almonds and chocolate chips.
Using a tablespoon, place equal amounts of cookie dough on to lined baking trays. Make sure that the cookies are spaced apart to allow for spreading during baking.
Bake in the preheated oven for about 15 minutes. I use the fan setting here.
Leave the cookies to cool for 5 minutes on the trays before transferring to a wire rack.
These cookies are super delicious with a glass of cold milk…
