Today I made some lovely chocolate cupcakes after a Sarabeth Levine recipe.
I decorated the cupcakes with a luscious chocolate cream cheese frosting…
Here is the recipe, enjoy!
Black Beauty cupcakes
- 1/2 cup (60 g) pure unsweetened cocoa powder
- 1 cup + 1 tablespoon (250 ml) boiling water
- 1 1/3 cup (170 g) all-purpose flour
- 1 cup (225 g) regular sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup + 1 tablespoon (100 ml) mayonnaise (contains egg)
Put the cocoa powder in a mixing bowl, then pour in the boiling water.
Add the sugar and beat for one minute.
Then add the flour, baking soda, salt and mayonnaise.
Beat for about 2 minutes.
Divide the mixture between 12 cupcake cases.
Bake in a 350 ˚F (180 ˚C) oven for about 20-25 minutes, middle rack position.
Leave to cool completely while you make the frosting.

Decorate with a single rose on top of each cupcake, using a Wilton 1M tip.
