These delicious cupcakes are perfect for the weekend, here is the recipe – enjoy!
Just Delicious Cupcakes
- 3/4 cup + 1 tablespoon (200 g) butter
- 1 1/4 cup (275 g) regular sugar
- 4 eggs
- 3 cups (375 g) all-purpose flour
- 2 teaspoons baking powder
- 1 2/3 – 2 cups (400-500 ml) Mars ice cream or another ice cream of your choice, still frozen
Put the butter and sugar into a mixing bowl and beat until fluffy.
Add the eggs one at a time, beating well between each addition.
Sift the flour and baking powder.
Bring out the Mars ice cream bars and cut into chunks.
Add the flour, baking powder and ice cream into the mixing bowl and beat for one minute.
Bring out your cupcake tray and paper cases.
Using an ice cream scoop, divide the batter between the paper cases.
Bake in a 400 ˚F (200 ˚C) oven for about 20 minutes.
Smells good already…
Don’t be tempted to open the oven door, be patient!
Leave to cool completely.
I used this frosting for these cupcakes.
I made small swirls using an Atexo 849 tip.
This frosting is so good, one of my favorites.
Decorate with a pink sugar pearl on top…
