I love the delicious Yoplait yogurt named “L’Amour” and was inspired to create these luscious and romantic L’Amour cupcakes.
L’ Amour Cupcakes
- 3/4 cup + 1 tablespoons (200 g) unsalted butter, at room temperature
- 1 1/4 cup (275 g) regular sugar
- 4 eggs, at room temperature
- 3 cups (375 g) all-purpose flour
- 2 teaspoons baking powder
- 1 1/4 cup (300 ml) vanilla custard
- 2 pots L’amour yogurt
- 3 1/2 oz. (100 g) fresh raspberries
- 1 teaspoon vanilla extract
Put the butter and sugar into a mixing bowl and beat until fluffy.
Add the eggs one at a time, mixing well and scraping any unmixed ingredients from the side of the bowl with a rubber spatula after each addition.
Add the vanilla custard and vanilla extract, mixing well using the rubber spatula.
Sift together the flour and baking powder, then repeat twice for extra added air.
Stir the flour mixture into the batter.
Fold the L’Amour Yogurt and the fresh raspberries into the batter.
I use these cute cupcake cases from klaraform.se.
Use an ice cream scoop for equally sized cupcakes, one scoop per paper case.
Bake in a 350 ˚C (180 ˚C) oven for about 25 minutes.
Fresh from the oven!
Leave to cool.
I use a Vanilla bean frosting for these cupcakes, you can find the recipe here.
Add a drop of food coloring, if you like.
Transfer the frosting to a piping bag fitted with a Wilton 1B tip and pipe three small swirls on top of each cupcake.
I sprinkled some pink sugar on top for some extra sparkle…
So delicious and so pretty in pink…
