Today I made a strawberry oreo pie, very easy to make but so good… The fresh flavors make it the perfect spring cake!
Here is the recipe, enjoy.
Velvety Strawberry Gelatine Pie
- 13 oz. (375 g) Oreo cookies
- 1/3 cup (75 g) butter
- 1 packet strawberry jelly powder
- 1/2 cup (125 ml) boiling water
- 1 can sweetened condensed milk
- 1 cup (250 ml) sour cream
- just under 1 cup (200 ml) whipped cream
- 3 1/2 oz. (100 g) fresh strawberries
- whipped cream, to decorate (optional)
Put the oreos and butter into a food processor and whizz until finely crushed.
Tip into a pie tin. (This teflon tart tin is from this webshop.)
Press the mixture firmly down and up the sides of the tin. Freeze for about 30 minutes.
In the meantime, make the filling.
Dissolve the jelly powder in the 1/2 cup (125 ml) of boiling water.
Add a can of sweetened condensed milk…
…and the sour cream.
Whisk well until completely smooth.
Carefully fold in the whipped cream.
Roughly chop the fresh strawberries.
Stir them into the jelly mixture.
Remove the pie tin from the freezer and pour in the filling.
Chill for at least 4 hours.
I decorated the top with some whipped cream.
Use a Wilton 1B tip to make little swirls.
Sprinkle over some pretty cake decorations to add some more color.
Ready to serve.
This is such a fresh and tasty pie. Swap the strawberry jelly for another flavor if you prefer.
