One of my favorite frosting: Marshmallows Frosting

 

Marshmallows frosting

  • 3 cups (675 g) regular sugar
  • 6 egg whites
  • 1/2 cup (125 ml) water
  • 1 teaspoon lemon juice
  • 2 teaspoons vanilla extract

This makes quite a lot of frosting, you may consider halving the recipe.

Put the egg whites and lemon juice into a mixing bowl.

Put the sugar, water and vanilla extract into a saucepan and give it a quick stir.

Place the saucepan on the heat and cook the mixture until the temperature is 248 ˚F (120 ˚C). Use a sugar thermometer if you have one.

When the sugar syrup is 248 ˚F (120 ˚C), whisk the egg whites until frothy. Add the sugar syrup a little at a time, still whisking.

Continue whisking until very fluffy, about 5 minutes. Do not overmix.

Add a few drops of pink food coloring if you want a beautiful pink color.

  1. Har prøvd å lage noe liknande med sukrin og det går ikkje. Heile poenget er at sukker gjer blandingen seig og klissete, og den samme konsistenden får du ikkje uten sukker. Prøvde å lage marengs på same måte og dei blei svert porøse, men ok dersom ein er desperat etter noe søtt uten for mykje kaloriar 🙂

    Jeg har egg allergi og prøvde igår å lage denne glasuren med eggerstatning. Det funket da ikke i det hele tatt. Lurte på om du kunne prøvd deg fram med eggerstatning og se om du klarer å lage en fluffy glasur med det? Prøvde forresten å lage cupcakesene dine igår, de med banan, sjokolade og hasselnøtter(?) igår, og de smakte såå godt!

  3. Oh my God!!!! I just made this!! My very first thing I’ve made from Manuela’s magazine. As per the instructions I halved it because my cake was small. And it was still a bit too much but oh my Lord!! What an amazing frosting! I am so excited that I could make something so different than the usual. Will definitely be making this again. This has even given me the courage to tackle making marshmallows. ?
