These cupcakes are made with the popular ice cream Häagen-Dazs Strawberry. You can taste the ice cream flavor in every bite, so delicious.
Delicious Häagen-Dazs Strawberry Cupcakes
- Just under 1 cup (200 g) butter, at room temperature
- 1 1/4 cup (275 g) regular sugar
- 4 eggs, at room temperature
- 3 cups (375 g) all-purpose flour
- 2 teaspoons baking powder
- 2 1/4 cups (500 ml) Häagen-Dazs Strawberry (from the freezer)
Put the butter and sugar into a mixing bowl and beat until fluffy.
Add the eggs one at a time, mixing well between each addition.
Sift together the flour and baking powder.
Add the still frozen ice cream to the batter and beat until everything is well blended.
Then add the flour/baking powder mixture and beat until well blended.
Use an ice cream scoop to make equally sized cupcakes, one scoop per paper case.
Bake in a 350 ˚F (180 ˚C) oven for 20-25 minutes.
Leave to cool completely.

I use a Wilton 1 B tip to make pretty swirls on top of the cupcakes.
Decorate with strawberry marshmallows or some sugar pearls. I get strawberry marshmallows from candy.com.
