Today I felt like baking cookies, and I ended up making these express cookies. 5 minutes work and 10 minutes in the oven!
Here is the recipe – enjoy!
Manuelas Express chocolate chip cookies (yield: about 25 cookies)
- 1 cup (225 g) unsalted butter
- 1 cup (120 g) regular sugar
- 1 1/2 cup (280 g) light brown sugar
- 2 eggs
- 3 teaspoons vanilla extract
- 2 1/2 cups (320 g) all-purpose flour
- 3/4 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 10 1/2 oz. (300 g) chocolate chips
Put the butter, sugar, brown sugar, eggs and vanilla into a mixing bowl, beat until fluffy.
Mix together the dry ingredients (flour, baking powder, baking soda and salt).
Tip in the flour mixture and beat until everything is well blended.
Stir in the chocolate chips.
I use a medium ice cream scoop per cookie. Arrange the mounds on a lined baking tray.
Bake in a 350 F (180 C) oven, fan setting, for 10 minutes.
Leave to cool completely.
Super yummy with a glass of cold milk…
These cookies will keep well for 3 days, if stored in a cookie jar.
