Hello everyone!

This ice cream cake is perfect for birthday parties and other special occasions; homemade chocolate ice cream with crushed Daim, topped a with luscious chocolate frosting and decorated with Smarties…

Easy to make and loved by both children and grown-ups.

Chocolate ice cream cake

  • 9 3/4 oz. (250 g) dark chocolate
  • 3 eggs
  • 2 egg yolks
  • 1/2 cup (115 g) regular sugar
  • 2 1/4 cup (500 ml) heavy cream, whipped
  • 1 3/4 oz. (50 g) crushed Daim
  • Manuelas Fluffy Chocolate Frosting, to decorate (optional)
  • Smarties, to decorate (optional)

Callebaut is one of my favorite chocolates to use when making ice cream. It has 53,8% cocoa solids and an amazing flavor!

Melt the chocolate in a bain marie and set aside for now.

Put the 3 eggs and 2 egg yolks in a large bowl with the sugar.

Place the bowl over a saucepan of simmering water and whisk by hand until the sugar has dissolved.

When the sugar has dissolved, remove the bowl from the heat and whisk with a hand-held electric mixer for about 7 minutes.

The egg mixture should be pale and fluffy.

Gently fold in the whipped cream…

…and then the melted chocolate.

100 % chocolate yumminess!

I use a food processor to finely crush the Daim.

Stir the crushed Daim into the ice cream mixture.

Pour mixture into an 8-inch (20 cm) round springform pan.

Place in the freezer for 4-5 hours.

I use this frosting to pipe little swirls on top of the cake. If you can’t get Manuelas Fluffy Chocolate Frosting where you live, you could use this one, or this.

Decorate with colorful Smarties.

Have a nice weekend everyone.

Hugs from me to you.

  9. Hi!
I couldn’t find Daim and heavy cream 🙁 but i really want to make  this cake
How would it be if i make it with normal cream and without Daim ??

Hi Alaz, you can use regular whipping cream instead of heavy cream. Daim can be omitted, or use chopped chocolate instead. 🙂
