This ice cream cake is perfect for birthday parties and other special occasions; homemade chocolate ice cream with crushed Daim, topped a with luscious chocolate frosting and decorated with Smarties…
Easy to make and loved by both children and grown-ups.
Chocolate ice cream cake
- 9 3/4 oz. (250 g) dark chocolate
- 3 eggs
- 2 egg yolks
- 1/2 cup (115 g) regular sugar
- 2 1/4 cup (500 ml) heavy cream, whipped
- 1 3/4 oz. (50 g) crushed Daim
- Manuelas Fluffy Chocolate Frosting, to decorate (optional)
- Smarties, to decorate (optional)
Callebaut is one of my favorite chocolates to use when making ice cream. It has 53,8% cocoa solids and an amazing flavor!
Melt the chocolate in a bain marie and set aside for now.
Put the 3 eggs and 2 egg yolks in a large bowl with the sugar.
Place the bowl over a saucepan of simmering water and whisk by hand until the sugar has dissolved.
When the sugar has dissolved, remove the bowl from the heat and whisk with a hand-held electric mixer for about 7 minutes.
The egg mixture should be pale and fluffy.
Gently fold in the whipped cream…
…and then the melted chocolate.

I use a food processor to finely crush the Daim.
Stir the crushed Daim into the ice cream mixture.
Pour mixture into an 8-inch (20 cm) round springform pan.
Place in the freezer for 4-5 hours.
Decorate with colorful Smarties.
