Hello everyone, my brother is visiting from the US these days, so I’m taking the opportunity to make some of his favorites.

He loves banana bread and “over there” they usually eat it with butter and a sprinkling of sugar. I happen to love banana bread too, and here is my recipe.

 

Banana bread (1 loaf)

  • 4  1/2 oz. (125 g) pecans
  • 3/4 cup (170 g) butter
  • 1  1/4 cup (285 g) regular sugar
  • 4 tablespoons honey
  • 1/4 teaspoon salt
  • 2 eggs
  • 4 ripe bananas, mashed
  • 3  1/2 oz. (100 g) chocolate chips
  • 3  1/3 cups (420 g) all-purpose flour
  • 1  1/2 teaspoon baking soda
  • 1 cup + 1 tablespoon (250 ml) sour cream

Preheat the oven to 350˚F (180˚C). Grease and flour a loaf pan.

Spread the pecans in a single layer on a baking tray and toast in the oven for 6 minutes. Leave to cool and then chop quite finely.

Put the butter, sugar, honey and salt into a mixing bowl and beat until light and airy.

Scrape any unmixed ingredients from the side of the bowl and add the eggs, one at a time.

Add the mashed banana and toasted pecans and beat until everything is well blended.

Sift the flour and baking soda into a bowl, then add to the batter and stir until well blended.

Stir in the sour cream and chocolate chips with a rubber spatula.

Pour the batter into the prepared loaf pan and bake in the preheated oven for about one hour.

A skewer inserted in the center should come out clean.

Leave to cool in the pan for about 15 minutes before turning out.

Enjoy the banana loaf with a nice cup of tea…

  3. Åhh, banana bread spiste jeg mye av da jeg bodde i New York! NAM.. denne må jeg prøve. Du er så flink du, Manuela 🙂

  4. Takk for svar Manuela:) Jo jeg er frisk og rask, mannen er noe dårlig pga lungebetnnelse nå, men så lenge ikke kreften kommer tilbake skal vi takle en lungebetennelse <3 takk som spør.Håper alt bra med deg og dine og husk å ta noen pustepauser oppi alt som skjer:)

  5. hihi, jeg kasta meg rundt i baking mens lillemann sov, og fant ut at det var litt slunkent i skapene her hjemme. så folkens, honning kan erstattes med sirup, natron med litt bakepulver og hornsalt, pekannøtter ble til en slump valnøtter og litt sesamfrø. vi hadde selvfølgelig ikke rømme heller, så da røyk mannens greske yoghurt.
    det ble great succes vil jeg påstå :))
